A light spicey seasoning that is a great start to tasting new Jerky flavours. A little like mild cabana can be used as a base for adding other flavours to, like garlic, chilli, paprika etc.

    Since starting my Jerky a few of the locals at the local pub have also been doing it. We recently had a "Jerk-Off"

    I am pleased to say that my Jerky with only the original blend and a few chilli flakes received and overwhelming 8 of 9 votes from the esteemed judges. The judges are all specialist beer drinkers and I reckon world class Jerk-Offs themselves. They knew what they were talking about!!!!

    I had never imagined I could make beef Jerry so when I started recovering from a recent quadruple bypass operation I wanted to get a dehydrator and do various foods in it healthy I thought , so began my search for seasoning for Jerry and I found Smokedandcured via a goggle/ebay search and not being the adventurous type I decided on 'original' and to be a wee be adventurous I got the 'bourbon' .so far I have only used the 'original' with garillo cut of beef , I did as was instructed and kept every step spot on (you must follow instructions spot on or you risk stuffing the Jerky up)..
    When the time came to coat the meat I thought to myself no way will the mix I made up of cure.seasoning be enough surely they have the amounts of each wrong , but it turned out to coat the weight I had perfectly . And it almost disappears once you start mixing the meat up or shaking the container used to marinade with , I decided to leave the meat a bit longer then the 24 hrs suggested as the meat I cut was thicker than 1/4 inch and the seasoning.cure penetrates at a rate of 1/4inch per 24 hrs .. I waited 26 hrs no idea if the extra 2 hours made a difference or not . But foward 26 hours and I racked up all the 900 grams of meat I ended up with from a 1.01 kilo hunk. (900 grams as it was easy to mix for 900 over 940) .. I put the dehydrator on 70c for 5 hrs swapping shelf about at 2.5 hours , next time I'll cut the time back as some of the Jerry was a bit hard but not so hard to not be able to bite into it.. so for my 1st try I really liked HiMountain 'original' and would highly recommend it too others just started out with Jerky or those experienced .. One of the main reasons well the only reason I chose HiMountain was it's comes with enough cure to go with the seasoning, some say no need to cure meet before making it in to Jerky some say yes you do ,I'm in the YES group in regards to curing meat before cooking.smoking.drying as no one wants or needs to become sick or to make others sick from Jerky you have made with love ..

    So in a nutshell I really like the makeup and taste of this product , I have the 'bourbon' to try and I also purchased the variety pack 2 off Smokedandcured ebay store . If you were not so far away 2.5hrdrive i'd come visit the shop .
