Traditional Sicilian recipe which can be used for fresh sausages or salami. Add 142g to 5kg of meat. If making salami add 3g of cure #2 (sold separately) per kg and 125g of Kosher Salt. If making fresh sausages just add 50g Kosher. Ingredients: crushed fennel, white pepper, crushed chili and salt. May contain traces of nuts, egg, and milk.
