this stuff is the best! if you have ever had smoked trout from buxton trout farm you will know that their smoked trout is the best in Victoria! well guess what? mine is better 24 _48 hours in the brine another 12 to air dry then smoked with the mountain ash flakes from smoked and cured....awesome!! cant get any better... sorry trout farm!!

I find this mix is well suited to trout as well as Atlantic Salmon. I mix 1packet with 1 gallon of water, in this I can cure up to six fillets pending on size. I leave the fillets in for 3-4 days then smoke them for 2.5 hours, mostly use fruit tree dust
