Warning – these beef sausages are going to change your life (as much as a sausage can change one’s life that is) – they’re bloody delicious!

Makes 5kg of sausages.

Directions for use: Use 3.8kg beef, 1.2kg pork back fat. Mince meat through a 6mm plate. Mix 5kg ground meat with Jalapeno Seasoning and 250ml dry white wine. Fill size 28-36 natural hog casings. Keep in refrigerator. Cook before serving.

Store seasoning in a cool, dry place away from direct sunlight. Use only as directed.

Ingredients: salt, jalapeno, sugar, garlic, pepper, onion, spices.
